Whenever I tell people that I often have a salad for breakfast the initial response is usually mild disgust.
Vegetables for breakfast?
What they expect to hear is that I eat some sort of monstrous plate of meat because that’s what “paleos” do, right? Sadly, they would still have issue with such a breakfast. Sometimes it’s hard to win.
I remember the first time I had a salad for breakfast. It was actually a forceful decision on my part, where I just wanted a dose of vegetables before the impending doom of visiting relatives. And that salad totally hit the spot. What’s not to like about a steak salad? So the secret is really in the meat. Meat always makes the most unappealing of things better. Like cabbage.
This breakfast cabbage stir-fry was born of of necessity, just like a lot of things I make. My vegetables-for-breakfast prospects were looking meek with only cabbage and half a bag of carrots left in the crisper. What I did next was lazily slap together some spiced ground beef with sliced cabbage without much hope. What can you really expect out of cabbage? And how did it find its way into my fridge?
But as we already know meat makes everything taste better.
So for those that can’t fathom the idea of having a salad for breakfast, this big batch cabbage stir-fry is great. I usually make it the night before and have it for the next two days, sometimes for breakfast and other times as a quick lunch. All it takes it some fried eggs overtop or leftover protein with some cherry tomatoes and diced avocado. And with Ramadan here it makes a very convenient and satiating breakfast option.
Now I love the idea of eating vegetables for breakfast and finally appreciate my parents for serving broccoli and peas with breakfast.

This stir-fry is just an idea and is very customizable so chose which spices you like. I change the spices up to resemble different kabob and sausage flavours like chapli kabob and Hungarian sausage.
Breakfast Cabbage Stir-Fry
- 1 tablespoon coconut oil, avocado oil or ghee
- 1 small onion, minced
- ½ pound ground beef
- 1 garlic clove, minced
- 2 teaspoon paprika
- ½ teaspoon ground cumin
- Kosher salt and freshly ground black pepper
- 1 small cabbage OR ½ a large cabbage head, sliced into strips
In a large pan heat oil on high heat. Add the onions to the pan and fry until they are starting to become translucent, about 2 minutes.
Add the ground beef, garlic and seasonings to the pan…
…And break the meat apart and frying for about 5 minutes until the meat starts to brown.
Add the cabbage to the pan…
…And stir-fry continuously until tender, about 5 minutes. You may need a splash of water to help it going.
Serve with an over-easy egg.
